Xylitol occurs naturally in fibrous fruits and vegetables — plums, strawberries, corncobs and mushrooms — and in some hardwood trees, including birch. Unlike xylitol made from felled birch trees, Nirvana's is derived from non-GMO corncob, an environmentally sustainable source. It's 100% natural, sugar-free, artificial-sweetener-free, fat-free, with 40% fewer calories than sugar and no additives, and has a low glycaemic index of just 7.
It tastes and looks like sugar, and a spoonful is roughly equivalent in sweetness to a teaspoon of sugar — it performs much like sugar in cooking and baking, from homemade ice cream to sauces and chutneys, and can be used in tea, coffee, cocoa or cold drinks. Xylitol is metabolised independently of insulin.
Xylitol was first identified by chemists in Germany and France in the 1890s, later found occurring naturally in plants, and approved by the US FDA in the 1960s for special dietary purposes. In 1983 the JECFA (a joint WHO/FAO expert committee) declared it a safe food sweetener, followed by the Finnish Dental Association's endorsement — the first of its kind worldwide, later echoed by dental associations in Britain and Sweden. It's approved for use in Australia by Food Standards Australia and New Zealand. Beyond sweeteners, it's used in chewing gum, pastilles, oral hygiene products such as toothpaste and mouthwash, and by the pharmaceutical industry.
Xylitol's dental research history runs back more than 30 years. In Finland, where its use is widespread, products containing it were excluded from confectionery taxation after a children's campaign in the 1990s, and gum pellets containing it are chewed after meals in many childcare centres.

Directions
Use as a 1:1 substitute for sugar in hot or cold beverages, cooking and baking. Adjust to taste.
Storage
Store in a cool, dry place, away from moisture and direct heat. Reseal after use.
Warnings
Excess consumption may have a laxative effect. Xylitol is not intended for dogs. Dogs metabolise some substances differently to humans — if your dog consumes any product containing xylitol, consult your vet immediately. Keep out of reach of children.
