Ground organic chickpeas, and nothing else — besan, also known as gram or chickpea flour, with an earthy aroma and a slightly nutty flavour that comes through in whatever it's used for. Naturally gluten-free, and a genuinely good source of protein and fibre compared to a standard wheat flour.

It's the traditional flour for flatbreads like roti and socca, and works well as a thickener in savoury dishes such as curries and soups. It's also nut-free, and its binding properties make it a useful vegan egg replacer in some recipes.
