Pure xylitol, premium grade, sourced from non-GMO corncob rather than felled birch. It measures and tastes close enough to sugar to use as a 1:1 substitute in hot or cold drinks, cooking and baking — a spoonful is roughly as sweet as a spoonful of sugar, and it performs similarly in recipes, from ice cream to sauces and chutneys.

It carries around 40% fewer calories than sugar and has a glycaemic index of 7, against roughly 65 for sugar, and is metabolised independently of insulin, with lower glucose and insulin responses recorded after ingestion than after eating sugar. Xylitol occurs naturally in fibrous fruits and vegetables like plums, strawberries, mushrooms and corncobs, and in some hardwood trees including birch. It was first identified by chemists in Germany and France in the 1890s, later found occurring naturally in plants, and approved by the US FDA for special dietary use in the 1960s.

In 1983, the WHO and FAO's joint expert committee (JECFA) declared it a safe food sweetener, an assessment followed by an endorsement from the Finnish Dental Association and later dental associations in Britain and Sweden. It's long been used in chewing gums, pastilles and oral care products such as toothpaste and mouthwash, and by the pharmaceutical industry as a sweetener in various products. Finland's use of it became widespread enough that gum pellets are chewed after meals in many Finnish childcare centres, and after a children's campaign in the 1990s, xylitol products were excluded from Finland's confectionery tax. It's approved for use in Australia under the Food Standards Australia & New Zealand code.
