Tiny black seeds with a mild flavour and a gentle crunch eaten dry, or soaked into a soft gel once they've had time to absorb liquid. That gel-forming trick is what makes them useful for thickening a smoothie, building a chia pudding, or standing in for egg in baking — a tablespoon of chia with three tablespoons of water makes one vegan egg substitute.

Directions
Add 1–2 tablespoons to smoothies, oats, yoghurt or salads. To make chia gel: mix seeds with liquid and let stand for 10–15 minutes until thickened. Use in baking or as a vegan egg alternative by combining 1 tablespoon chia with 3 tablespoons water.
Storage
Store in a cool, dry place. Reseal firmly after opening to maintain freshness.
