Chunks of Buderim's Naked Ginger — 55% ginger, cane sugar, citric acid and sodium bicarbonate as acidity regulators, and dextrose — sit under a coating of 55% dark chocolate, made from cocoa solids, cocoa butter, sugar, milk fat and soy-based emulsifiers. The result is a genuinely zesty, spicy centre against a rich, slightly bitter chocolate shell, rather than the ginger flavour being lost under the coating.
