Lemon and lime juice concentrates lift the citrus, pectin sets it, and there are no artificial colours or flavours.
On hot toast or a split scone the heat comes through clearly. It also does well brushed over pork or chicken as a glaze in the last minutes of roasting, stirred into a steamed pudding or spooned beside cheddar and blue cheese on a board, where the ginger cuts through the fat.
