Stevia rebaudiana is native to Paraguay and Brazil, where the leaf has been used for centuries. It was documented by the Italian botanist Dr Moises Santiago Bertoni in the forests of Paraguay in the 1880s, and has since spread well beyond South America. It's used in over 30% of packaged food products in Japan, and accounts for around 40% of the sweetener market in South Korea, with significant consumption in Brazil and China too. More recently it's grown in popularity across North America, Malaysia, Israel and the Pacific Rim, alongside Australia.
The taste of a stevia product depends heavily on the quality of the plant, the growing conditions and the extraction process — lower-grade extracts are the ones that pick up the grassy, slightly bitter aftertaste some people associate with stevia.
