Ground from guar bean seeds, this is an off-white, flour-like powder with an earthy smell — organic guar gum, used as a thickener and emulsifier in gluten-free baking and as a source of soluble fibre when taken on its own. It's the ingredient that gives gluten-free baked goods some of the sticky, elastic quality gluten normally provides.
A little goes a long way: half a teaspoon per cup of gluten-free flour is the general rule for cakes, muffins, bread, cookies and pizza dough. Overdo it and baking tends to turn heavy and stringy rather than light, so it's worth measuring rather than eyeballing.
