Hand-harvested from the saline marshlands of Le Guérande in Western France, using non-mechanised, human-scale methods rather than industrial processing. It's unwashed, unrefined and additive-free, which is why it keeps its natural grey colour — the shade comes from contact with the clay found in the salt marshes as it crystallises.
Unlike table salt, which is heat-processed and refined down to plain sodium chloride, this retains trace minerals including magnesium, calcium and potassium, giving it a distinct flavour and a moist texture rather than a dry, uniform grain. This coarse grind suits salt crusts for meat or fish, stocks, and barbecue or meat rubs; the fine grind (sold separately) shares the same mineral profile but suits pasta water, vegetables and general table use.
The crystals can also be used to make an exfoliating body scrub.
