Organic buckwheat flour, coconut milk powder and wheat protein isolate do the work that egg and dairy usually handle in a pancake mix, alongside organic plain flour, sugar and raising agents. Add water and whisk — nothing else needed — for fluffy, golden pancakes with a hint of vanilla.
Top with fresh fruit and coconut yoghurt for a lighter stack, maple syrup for something more indulgent, or nut butter and seeds for a more filling option. The mix also works for pikelets or mini pancakes for lunchboxes.

Directions
Add 1 cup of pancake mix to ¾ cup of water and whisk until smooth. Pour the batter into a lightly greased hot pan, cook until bubbles form on the surface, then flip and cook until golden on both sides.

Store in a cool, dry place away from direct sunlight. Reseal tightly after opening to maintain freshness.
