Organic whole apples are pressed to get juice, which is fermented into alcoholic cider and then fermented a second time to convert the alcohol to acetic acid and create the beloved health tonic and cooking vinegar we know as ACV. Vessels with traces of vinegar have been uncovered dating back to 6000 B.C.E. It was Hippocrates (circa 400 B.C.E.) who first started prescribing apple cider vinegar for a variety of illnesses, a general preventive and for wound care.
